Shannon’s Baked Onion Rings

Ingredients
2 Rosa Bella® Gourmet Pink Onions, cut into 1/2 inch rings (save small center rings for other recipes)
2 tablespoons canola oil
cooking spray
Coarse salt and ground pepper
Wet ingredients:
2 large eggs
1 cup low-fat buttermilk
1/4 cup all-purpose flour
1/2 teaspoon lemon pepper
salt and pepper
Dry ingredients:
1/2 cup Parmesan cheese
1 cup plain dried bread crumbs
1/2 teaspoon lemon pepper
Directions
Preheat oven to 425 degrees. In a medium bowl, whisk together egg, buttermilk, flour, and remaining lemon pepper and season with salt and pepper. In a large bowl mix Parmesan cheese, 1/2 teaspoon lemon pepper and bread crumbs.
Pour oil onto a rimmed baking sheet. Place in oven and heat 2 minutes. Remove sheet from oven and tilt or spread with brush to coat evenly with oil.
Dip onion rings a handful at a time in the egg mixture (letting excess drip off) and toss in crumb mixture. Arrange onion rings on sheet and spray lightly with cooking spray. Bake, turning once, until onion rings are golden brown, about 16 minutes. Season with salt and pepper. Serve as is, or with your favorite dipping sauce.
