Black Bean and Corn Salad
Serves 6 to 8
Ingredients
2 (15 ounce) cans black beans, rinsed & drained
1 (15 ounce) can whole kernel corn, drained
1 (2 ounce) can sliced black olives, drained
1 Rosa Bella® Gourmet Pink Onion, peeled and chopped
2 tomatoes, seeded and chopped
2 jalapeno peppers, ribs and seeds removed, minced
1 avocado, seeded, peeled and chopped
1/4 cup fresh cilantro, chopped
3 tablespoons lime juice
2 tablespoons canola oil
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1/2 teaspoon cumin
Hot sauce (optional) to taste
Directions
In a large bowl, whisk together lime juice, oil, vinegar, salt, pepper and cumin. Add remaining ingredients; toss to coat. Cover and chill 2 hours to allow the flavors to meld and develop before serving.
