How to get the most from your onions

Choosing

When shopping, choose dry onions with papery skin. They should be firm, heavy for their size and odorless. Avoid bulbs with any cuts, bruises or blemishes.

Storing

Store whole onions in a cool (40-50°), dry, dark, well-ventilated room. In an airtight container, peeled whole onions can be stored in the fridge for up to two weeks; cut onions will last up to 10 days.

Cutting & Dicing

Onions release a gas called lachrymatory factor (LF) when cut. The onion base has a higher concentration of these substances, so leaving the root end intact while cutting may reduce eye irritation.
