Ultimate Onion Smash Burger
Onion three ways — diced in the burger meat, caramelized on top, and served on an onion bun!
Makes 4 burgers
Ingredients
Vegetable oil (for pan)
1 1/4 pound (20 ounces) ground beef (20% fat)
1/3 cup finely diced Rosa Bella® Gourmet Pink Onion
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper (or more to taste)
4 slices sharp cheddar cheese
4 onion buns or rolls, toasted
1 cup warm caramelized Rosa Bella® Gourmet Pink Onion (skillet or slow cooker)
Condiments: mayonnaise, mustard, ketchup, green leaf lettuce, tomato slice, and dill pickle chips
Directions
1. Heat a cast-iron or large heavy skillet (or griddle) over medium high heat until very hot, about 2 minutes, then lightly brush with vegetable oil. In a medium bowl, mix ground beef, diced onion, salt and pepper. Divide into 4 equal portions (5 ounces) and form into balls.
2. You may have to cook one at a time (or in batches) if the portions won’t all fit in your skillet or griddle. Place a portion on cooking surface and smash flat with a spatula to form a 4” diameter patty. The ragged edges resulting from the smashing are desirable. Let the patty cook undisturbed about 2 minutes or until outer edges are brown. Flip patty and place a slice of cheese on top. Cook about 1 1/2 minutes more for medium burgers.
3. Serve patties on onion rolls with 1/4 cup of caramelized onions on top of each patty. Add condiments as desired and enjoy!
