Caramelized Onions in Slow Cooker

Ingredients

2 pounds (1 package) Rosa Bella® Gourmet Pink Onions, sliced and cut in half- or quarter-circles

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon pepper

Directions

1. Turn on your 4-to 6-quart slow cooker. Place sliced onions in the slow cooker. Add olive oil, salt and pepper and toss to evenly coat onions with a glaze of oil.

2. Cook onions for 8 to 10 hours on LOW setting. You can stir them a few times if you’re around, but it isn’t necessary. The onions will be dark golden-brown and soft.

3. Optional: you can continue to cook them for an additional 2 to 5 hours. Check them every hour and stop cooking them when you are happy with the results. If you like them jammier, darker and more concentrated, you can leave the lid ajar so some of the liquid can evaporate.

4. Caramelized onions will last for a week in the refrigerator in an airtight container. They will keep in the freezer for at least 3 months.
